New Tantalising Southern Italian Summer Dishes at the Grand Lisboa Hotel’s Don Alfonso 1890 Restaurant

“King of Pasta” Michelin-starred chef Alfonso Iaccarino takes you on a first-of-its-kind Southern Italian epicurean summer experience in Macau
Macau, 13 July 2010 – Southern Italy’s highest rated Michelin chef Mr. Alfonso Iaccarino is offering brand new seasonal summer dishes at the Don Alfonso 1890 restaurant, located at the Grand Lisboa Hotel in Macau. The new a la carte menu serves up a range of delectable homemade pasta, fresh seafood and garden vegetables dishes, many of which are being introduced for the first time in Macau. The seasonal summer menu is available from now until mid-August.
Customers at Don Alfonso 1890 are in for a treat as Master Chef Iaccarino, known widely as the “King of Pasta”, introduces a selection of authentic Southern Italian delights from his native Sant'Agata sui Due Golfi in South Italy. The summer dishes feature authentic Mediterranean flavours and include dishes such as “Home-made scallops gnocchi on a layer of black ink sauce with sea urchins and celery shoots”; “Black pork from Caserta, rolled in Neapolitan style, braised with almonds and pistachio from ‘Bronte’ and tenderloin with mustard seeds”; and “Fragrance and flavour of fresh lemon from Amalfi, custard, sweet tempura and bignè”. All the dishes will be prepared and supervised by Don Alfonso 1890’s executive chef, Vincenzo Castaldo.
Don Alfonso 1890 serves understated yet unmistakably the finest traditions of Southern Italian cuisine and reflects the original flavours of Chef Iaccarino’s family heritage and highest Michelin-rated restaurant in Southern Italy. Chef Iaccarino is famous for his strong belief in using only the freshest and highest quality ingredients, as well as in preserving their original flavours. Reflecting this philosophy, produce and ingredients used in the Macau restaurant are sourced from every corner of the world.
Over 70 per cent of the ingredients are flown in directly from Chef Iaccarino’s family organic farm in Southern Italy, while the rest is carefully sourced through global suppliers and vendors in order to provide the season’s best offerings to satisfy the discerning palettes of Don Alfonso 1890’s customers. Fish, for instance, is imported directly from the famous fish markets in Japan.
The Don Alfonso 1890 Macau restaurant is owned by the Lisboa Hotels and shares the phenomenal wine cellar with Robuchon a Galera at the Hotel Lisboa with over 7,000 labels.
The restaurant’s impressive wine list was awarded the “Grand Award” by the Wine Spectator Magazine in 2010.

About Alfonso Iaccarino
Alfonso Iaccarino comes from a family of hoteliers. The Iaccarino family has been in the hospitality business for four generations and to this date, Alfonso and his family still manages both the hotel and restaurant Don Alfonso 1890, the highest Michelin-rated restaurant in Sant'Agata sui Due Golfi in South Italy.
